Travel Pillow: How Asia Can Make You Healthy In More Ways than One

I have always wanted to travel to exotic countries where way of life is far different from my own. As a teenager in New York, however, I quickly sidelined that desire and immerse myself in the typical teenager lifestyle of the West. Drinking, partying, and staying out all night long were staples of how I lived my life. This went on for years and would probably continue more if one of my drinking buddies didn’t die from alcohol toxicity. And of-course you can travel without a comfy travel neck pillow.

It was at this point that I had to re-evaluate my life. Together with several friends, we have decided to really make changes in our life – starting with a healthier lifestyle. While they opted to join gyms or adopt the DASH Diet – I decided to go back to a long-abandoned dream: traveling Asia.

Of course, the common question was: what does traveling have to do with being healthy? The truth was I had no good reason to connect ‘travel’ with ‘health’ but I might have made a good argument because my parents and friends finally accepted my decision, even giving me a nifty New York travel pillow. It was going to be an adventure and I was going to be really alone for the first time in my life. But I already resolved that when I do come back: I would give everyone a clear and convincing reason on why my sojourn through Asia turned my life around.

The plan was simple: hit every major city in Asian countries of Malaysia, Japan, Korea, Philippines, Singapore, and Thailand. I decided to stay for months on each country since the rent per month is cheaper than rent per day in hotels.

So what did I learn? In truth, the food of Asian countries is just one part of the ‘healthy lifestyle’ I promised myself I would have. Japan and Malaysia especially offer some of the best heart-healthy food with so many fish and vegetable offerings and very little meat. I think what really got my spirit up, however, is the very culture of these Asian countries. Health is not just about the body – it is about the mind too and Asian countries have this incredibly convincing approach on spirituality and body health. Meditation in Thailand, for example, has been incredibly helpful in letting me handle stress. After being taught this discipline by masters of the art, I was able to enjoy deep sleeps while riding a bus, my travel neck pillow is the only thing offering softness and support. Yes – that might sound funny in writing, but considering the amount of time spent on planes and boats and buses during travel, this is definitely one of the best things to happen to me. P.s. I’m in the Philippines now and a few weeks from now, I would be in Singapore. I’m currently planning where I would go next from there – probably India or China. Comparing my mind and body to how it was in New York, I would have to say there has been a considerable improvement. People say traveling can be exhausting but no if you do it right. I’m slimmer now – but in a good way, and I have a toned body thanks to the amount of walking and exploring I have done in these countries. More importantly though, I’m healthier spirit-wise.

My weight problem began when the adolescence stage hit. At first, the unveiling of my curvaceous womanly figure excited me. However, I just couldn’t stop eating and growing. Before I knew it, I was chubby and overweight.

I hated myself, I cannot truly say that I enjoyed my teen years. I was always hiding away from people and shy to even live my life. I wished for invisibility and this sad phase of my life to come to an end.

During my 21st birthday, my dad surprised me with an all paid expense trip to my favorite continent in the world; Asia. Everyone who knows me knows just how much Asia fascinates me. I couldn’t wait to leave so I did. A week later.

When I landed in China, I was like a child in a candy store. After 15 minutes of roaming aimlessly, I decided to look around in a little rustic Chinese shop. An old lady emerged from a backroom and bowed for greetings. I am familiar with this culture so I did the same. I asked for a bottle of water but her eyes were fixated at my unsightly pot belly and acne infested skin. She pointed at my belly and asked if I wanted a remedy for it.

Anyone who knows about Asian countries knows that they are good at formulating traditional medicinal herbs that actually work. I nodded and convinced myself that I had nothing to lose. This turned out to be the best decisions of my life.

She emerged from the back room moments later with a tray and on it; a cup, some green powder, and an ancient Chinese kettle. Emily is a 15 years old young girl who held from the province of Kandal in Cambodia. Kandal remains one of the provinces of Cambodia located in the southeast of the nation. It borders with Kampong Cham to the north, Takeo and Prey Veng to the west and south; it shares an international border with Vietnam. Its largest and capital town remains Ta Khmao, which is twenty kilometers south of Phnom Penh. History records that Kandal continues to be one of the wealthier provinces in Cambodia. While Kandal continues to maintain its heritage of substantial financial income, people residing in this region lacks good health in ignorance.

Emily’s parents lack a good sense of providing a balanced diet for their kids. When talking about matcha, travel neck pillow, meal prep and healthy diet, Emily’s parents can tell a little or nothing. It has totally made her health deteriorate in oblivion. Nevertheless, the young lad believes that there must be something better outside her clan. Emily has two uncles and three grown-up sisters who reside in other parts of Asia. While preparing for her junior school certificate exam, Emily had the opportunity to visit Uncle John, who lives in Japan. She was offered matcha drink as a welcome gift to Japan.

  • 6 eggs
  • 2 tsp. vanilla
  • 2 tbsp melted butter
  • 2 tbsp full fat coconut milk
  • 1/4 cup coconut flour
  • 1/8 tsp nutmeg
  • 1/8 tsp cardamom
  • 1/2 tsp pumpkin spice blend
  • 1 tsp cinnamon
  • pinch of seas salt
  • 1/2 tsp baking soda
  • 4 drops of enzo stevia, or to taste
  • a small handful of pumpkin seeds to top off the bread

Instructions:

  1. Preheat the oven to 350 degrees F. Whisk all the liquid ingredients together, including enzo stevia drops to taste (I use four). Then add in the dry ingredients and mix until combined, removing all clumps. If you like, add in the chopped figs and combine. Grease a 9X9 baking dish and pour the batter in, spreading evenly. Top with the pumpkin seeds. Bake for around 15-20 minutes, or until the toothpick test comes out clean from the center of the bread.

Instructions:

  1. Directions (for the crust): Line a brownie pan with parchment paper both ways.
  2. Melt the coconut butter in a large microwave safe bowl (it took me about 60 seconds total at 30-second intervals).
  3. Stir in the coconut milk, and add the molasses and extracts.
  4. Stir in the cocoa powder. Then, stir in the protein powder. Fold in the oats. Press into the prepared brownie pan (I used a pastry roller. If the filling is sticking to the utensil you are using, wrap your fingers in plastic wrap and press down on the mixture until it reaches all corners and make sure it’s level). Refrigerate while you make the filling.
  5. Directions (for the filling): Put the greek yogurt into a medium-sized mixing bowl and add the powdered erythritol, stir until erythritol dissolves.
  6. Fold in the protein powder with a rubber spatula. When the mixture is thick and sticky, add the coconut oil and fold it in. Add the dried milk and fold that in too (the mixture should be very sticky, so don’t touch!). Scoop into the brownie pan and try to level as best as you can with the rubber spatula (it doesn’t have to be perfect, it will naturally settle into a level layer). Refrigerate while you make the ganache layer.
  7. Directions (for the ganache layer): Melt the chocolate in a microwave-safe bowl at 30-second intervals, stirring in between each one, until melted.
  8. Whisk in the coconut milk. When the mixture is even and lighter in color, whisk in the enzo stevia and carefully stir in the powdered erythritol. Pour into the brownie pan and spread by gently shaking the pan back and forth until the ganache reaches the corners. Refrigerate until chocolate is firm, then slice and serve!

Instructions

  1. In a quart jar, combine nut butter, lime juice, fish sauce, sesame oil, umeboshi vinegar, enzo stevia, and water
  2. Close jar and shake well
  3. Add cilantro, garlic, ginger and chili powder and shake again until ingredients are well combined
  4. Use as a dip for jicama and cucumber, or serve over salad or spring rolls

Although mine has turned out somewhat differently, this recipe is inspired by one I found in the May/June issue of Clean Eating; that recipe was the launching pad for me to come up with this cilantro infused addictive sauce.

  1. Stir together ground oats, baking powder and salt in a small bowl. Melt butter or coconut oil in a large saucepan. Remove from heat. Stir in Cocoa. Blend in Splenda/enzo stevia, eggs/eggwhites and vanilla.
  2. Blend in dry ingredients and nuts. Pour batter into greased 13 x 9 x 2-inch rectangular baking pan. Bake in a preheated 350degrees F (180 C) oven for 30-45 minutes or until done. Check to see if they’re done by poking a toothpick through the brownie; if it comes out clean then they’re done. Cool.

I love a good green smoothie recipe. I’ve been part of the health industry since 1993 and have been whipping up healthy, yet tasty treats like this for just as long! This Keto Mint Chip Smoothie is a classic family favorite that’s perfect for St. Patrick’s day and all year round!

Make this Keto Mint Chip Smoothie on a busy morning for a quick breakfast. With a base of hemp seeds, kale, and protein powder, you can throw it together in a couple of minutes. It’s also a favorite after school snack in our house.

With no added sweeteners that spike your blood sugar this green smoothie will keep you going all morning. Unlike other smoothie recipes that have high-carbohydrate sweeteners such as honey, maple syrup, or fruit juice, this healthy keto smoothie recipe is the perfect low-carb high-fat (LCHF) recipe to start your day.

Keto Mint Chip Smoothie

Instructions

  1. Place kale and coconut milk in a vitamix
  2. Blend on high speed for 60 seconds, until smooth
  3. Blend in hemp, egg white protein, peppermint, and enzo stevia for 30 seconds
  4. Blend in ice
  5. When shake is thick and smooth, blend in chocolate chips
  6. Serve

I love using hemp seeds in my smoothies for a number of reasons. First, they’re a fantastic food for the Keto Diet. Second, they’re a great dairy-free, nut-free way to add a smooth texture and rich, creamy flavor to healthy smoothie recipes. Finally, hemp seeds are high in healthy omega-3 fatty acids.

In the summer and fall, I love making this green smoothie with kale that I pick from our garden. This shake is not about hiding vegetables from your children, it’s about being able to eat something quick and hearty for breakfast that has a good dose of protein, fat, and fiber.
